1 ripe Tomato,chopped-------------------------------- 1/4 cup Cottage Cheese (Chana)
1 Cucumber,diced (1 cm)------------------------------ 1 small head Iceberg Lettuce 1 tsp Salt
3 Tbs Lemon Juice------------------------------------1/4 tsp Black Pepper,freshly crushed

1.Fluff the cottage cheese,with a fork,set aside.
2.Remove the outer leaves of the iceberg and discard.Shred the lettuce into thin slices.
3.Place the lettuce on a serving dish.
4.In a mixing bowl combine the remaining ingredients except the cottage cheese and blend well.
5.Pour this mixture over the lettuce shreds(#3),and arrange the cottage cheese (#1) on top.

Caesar Salad

The most popular salad is of course the 'Garden Salad'made with fresh chopped tomatoes,cucumbers,lettuce,radish,white onions and carrots dressed with a 'Vinaigrette'made with.. 3 Tbs Oil + 1 Tbs Vinegar + 1/2 tsp Salt + 1/4 tsp Pepper.The Deshi salad (which omits the vinegar and replaces pepper with green chillies) as a 'Side Dish'as we know it today,and which has become an indispensable part of our Club meals was first introduced by the British.

1 head Lettuce,torn into small pieces -------------- 2 stale Bread slice,cut into cubes
1 head Baby Spinach or Lal Sak,separated------------ 2 Eggs,hard boiled,chopped
2 Tomatoes cut into wedges ------------------------- 1/2 cup Cheese,grated
1 Garlic clove,halved ------------------------------ 2 Tbs Lemon Juice 1/4 tsp Salt
5 Tbs + 5 Tbs Olive Oil----------------------------- 1/4 tsp Pepper,freshly ground

1.Heat 5 Tbs oil in a saucepan;toss in :garlic bread cubes,saute until golden on all sides.Strain out the cubes drain on paper towels.Discard garlic.
2.Now make the dressing;in a small bowl whisk:lemon juice + 5 Tbs oil + salt + pepper.
3.In a salad bowl combine:lettuce + spinach/lal sak + tomato + bread cubes(#1) + eggs +cheese.
4.Pour the dressing (#2) over this combine and toss to blend everything properly.

Potato Salad

A very popular Club dish served in almost all the Club Buffets,it is both easy to make and takes a headache off the Chef by having another undemanding dish to cover the buffet table with and made effortlessly by a demi-chef.

250g Potatoes,boiled peeled and cubed --------------------- 1 Apple,cored,peeled and chopped
1 Tbs Onion,chopped --------------------------------------- 5 Green Chilies,deseeded and chopped
150g Mayonnaise
1 Tbs Mint,chopped

1.Mix everything and chill before serving.

Cucumber Salad

2 Cucumbers------------------------------- 1/2 tsp Pepper
2 Tbs + 1/2 tsp Salt---------------------- 1 tsp Sugar
4 Tbs Carew's Vinegar--------------------- 2 Tbs Mint,chopped

1.Peel the cucumbers and slice into halves.Using a tea spoon scoop out the seeds.Slice the halves into thin slices.
2.Sprinkle the cucumbers with 2 Tbs salt.Arrange them on a colander and let macerate for an hour.
3.Drain the cucumber and combine with the rest of the ingredients,toss and serve.

Cold Beetroot

200g Mint ----------------------------------1 tsp Sugar
1 kg Beetroot------------------------------ 1/4 tsp Salt
150ml Carew's Vinegar---------------------- 1/2 tsp Pepper

1.Boil the beetroot in plenty of water untill tender.Drain,peel and slice them into 0.5 cm thick rounds.keep aside.
2.Place the mint in a bowl and pour over boiling water.Leave to soak for 3-mins.
3.After 3 minutes drain the leaves and chop them into small pieces.keep aside.
4.In another bowl combine the following:vinegar + sugar + salt + pepper.Mix up.
5.Drop in the beetroot rings (#1) in to this spiced liquid.
6.Cover this bowl with cling film and chill for 3 hours.
7.Pick out the beet-rounds from the spiced liquid ,shake off extra moisture and arrange them on a shallow serving dish.
8.Sprinkle beet-rounds with the chopped mint (#2) and serve cold.

Prawn salad

This prawn salad is a meal by itself,or a wonderful complement to a larger meal as a side dish.Make sure your prawn is the freshest possible.If you are buying prawn is best to buy those that are still frozen.Prawns once thawed have a very short shelf life and will not be nearly as flavourful..Presently the "Shrimp/prawns doused in Thousand Island Dressing from a commercial bottle.This salad will win your heart.

500g Prawns--------------------------------------- 3 Tbs Lemon Juice
1 bunch Tender Amaranth (data)-------------------- 2 Tbs Mustard Oil
2 Tomatoes---------------------------------------- 1 Tbs Mustard paste
4 Garlic cloves,crushed--------------------------- 1 tsp Hooney
1 small Bok Choy 1/2 cup Austogram Cheese--------- 1 tsp Salt
1 tsp Salt---------------------------------------1/2 tsp Red Chilli powder

1.Boil the prawn in salted water,take them out,and shell them.Pat dry with a paper towel,excess fluid will dilute the flavour of the salad.Place prawns in a mixing bowl.

2.Cut amaranth into 3 pieces,discarding bottom part and leaves.Boil them in the same water you cooked the prawns.Cook amaranth for about 5 to 7-mins,and drain and make sure excess water is soaked off with paper towels.Cut amaranth pieces into 3cm lengths,add to the mixing bowl.

3.Cut tomatoes in half,remove seeds,and squeeze out surplus fluid.Cut 1cm pieces,add to the mixing bowl.

4.In another mixing bowl,whisk the following:lemon + mustard oil + mustard paste + honey + garlic +salt + red chilli powder.Pour this dressing mosla into the 1st mixing bowl.

5.Toss all the ingredients and allow Prawn Salad to marinate,refrigerated for at least 15 minutes.

6.Discard outer leaves of bok choy,rinse,dry,and shred into broad strips.

7.Serve chilled shrimp mixture (#5) on a bed made of bok choy strips and top with grated cheese.

2 boneless Chicken Breasts,skin on-------------------------- 2 Tbs Sesame Seeds,toasted
5 tender Taro Leaves (Kochu Pata)--------------------------- 2 Tbs Soya Oil
1 small Bok Choy ------------------------------------------- 2 Tbs Soy sauce
1 Carrot --------------------------------------------------- 1/4 cup Carew's Malt vinegar
1 bunch Spring Onions--------------------------------------- 3 Tbs Honey 1 tsp Red Chilli flakes
1/4 cup Cilantro-------------------------------------------- 2 tsp Salt 1/4 tsp Black Pepper

1.Season chicken with: 1 tsp salt+pepper.Place them on a glass plate and microwave for 5-mins on high,and another 5mins on medium power.

2.Take out and when cool enough to touch,remove and discard skin,and cut meat into bite size pieces.Place the pieces in a mixing bowl.

3.while chicken is cooking place the taro leaves in salted boiling water for about 10 minute.Drain,rinse,and chop leaves into thin shreds.Squeeze excess water from leaves,and put them in the mixing bowl.

4.Thinly slice bok choy,and then shred the carrot.Carrot easily shreds in food procesor with shreddingblade and deposit the bok choy and carrot shreds into
the mixing bowl.

5.Chop cilantro and spring onions;add to sliced bok choy and carrot,in the mixing bowl.

6.Whisk the following:oil+soy sauce+malt vinegar+honey+red pepper flakes+1 tsp salt.

7.Toss the vegetable and chicken in the mixing bowl-with this spice dressing.Sprinkle with sesame seeds just before serving.

[Note]-Chicken breasts can easlly dry out during cooking,so leave the skin on until cooked.By leaving the skin on while baking helps to keep the breast moist
and flavourful.

Their usefulness over,and the Empire established,the British pushed those very same country-born Christians(also called Anglo-Indians from the early 20th century-though originally the name was coined to describe a Brit living in India or an India -returned Brit),who had defended the the Union Jack during the 1857 war,into restricted post with no future.

Along with few ladies from the Dhaka Nawab Bari,it was mostly Anglo-Indian ladies that were the first women to patronize the Dacca Club Bar.It was the Anglo-Indian girl who first volunteered and led the way for the emancipated women outside the home.They were the first among women to take up careers.The army of smart,efficient Charmin's and Gloria's kept the typewriters of Dhaka's mercantile offices alive and noisy.As teachers they were the backbone of the English medium schools in Dhaka,Comilla and Chittagong.Many of us fondly cherish and owe a debt to those who ran these great institutions-from Principal to Nursery Teacher.

I firmly believe for historical reason we should document Dhaka Club's times of yore cooking evidence,before it gets eroded from any record.It will be a treasure trove for the coming generation.
Whatever little remained in our collective memory should be preserved not for preservation purpose only;but should be  presented in such a fashion so that we can partake in the repast of the bygone era.
